TATAKI OF LOCAL SALTED MEAT IN CRUST OF NUTS ON A SALAD OF HEAD CABBAGE AND APPLES SCENTED WITH CUMIN

Preparation:

Prepare the salad by cutting the cabbage into julienne strips. Season with apple vinegar, cumin, Garda extra virgin olive oil and diced apples. Wait for a few minutes.

Take a slice of salted meat, make cylinders 3 cm thick and 8 cm long. Roll them in a fairly fine grain of nuts.

Heat a pan with some oil, place the salted meat cylinder on it and brown it on all sides for a few seconds.

Put the mixed salad in a plate, cut the meat previously browned with slightly thick transverse cuts and place it on top.

To finish the dish you can garnish with a few drops of apple juice and balsamic vinegar reduction and toasted wholemeal bread.
